Shortbread Special


Mak had a special celebration for the birthday gals.. So made cookies to put in jars as a birthday gift. I have tried so many cookies recipes, never really got it right. I had to make these twice to get it just right. I love making them! I have to start a new project, I need to make a recipe keepsake. Have no idea yet of what I want or how I am gonna do it. I need have that so I can start collecting beautiful recipes such as this. This recipe is called the Icebox Shortbread from Martha Stewart's Everyday Food.

Why not use the cigar box I gave you to keep all your fav recipes? You can print or write the recipes on 4x4 cards...actually I should give you back your Sizzix album cover and page inserts...its the perfect size for recipe cards...

are the cookies chewy soft or crunchy? Is it roll out dough or drop cookies?

actually just this mrng, i did a simple album that sort of looks like the sizzix album page inserts sizes are 7x6 for inserts. really easy.. will post that as soon as its completed..

cookies are cruncy and yes its a roll out dough so you can keep in the fridge and when you have guests just slice it as thick as you want, bake it for 15 minutes and there you have it! homemade cookies.. i love the recipe.. its fun (the rolling and wrapping bit) and its easy!!

FYI recipe for Icebox Shortbread is as follows:
1.5 sticks of butter
1 cup of sugar
2 cups of all purpose flour
1/2 teaspoon of vanilla essence

mix everything. add in nuts or bits of fruit or colourfull sprinkers. roll onto baking/wax paper. twist both ends. keep refrigerated for 1 to 1.5 hours. remove for fridge and slice then bake for 15 to 20 minutes. To keep longer in fridge make sure rolls are kept in zip bag and can keep to up to 6 months, the book says.. try it!
